Apricot and Ginger Chicken No-cook Freezer Meal (Recipe Included)

If you are looking for a mix of flavors in a quick and easy slow cooker freezer meal, this is it! This Apricot and Ginger chicken no-cook freezer meal is great with a salad or potatoes. You can either throw everything in the slow cooker at once and cook the same day or put everything in a bag and freeze for when you are ready.

Apricot and Ginger Chicken (no-cook freezer meal)

Prep time: 5 mins

Cook time: 5 hours

Total time: 5 hours 5 mins

Serves: 6

Ingredients for freezer meal:

  • 1-2 pounds boneless, skinless chicken breasts
  • 1/2 Cup Apricot Jam
  • 2 tablespoons Soy sauce
  • 2 inch fresh ginger root (peel and grate)
  • 2 cloves garlic
  • 1 pound green beans (frozen or fresh)
  • 1 pound corn (frozen or fresh)

Instructions:

  1. To Freeze: Put all ingredients into large freezer bag and freeze
  2. To Cook: Place all ingredients into slow cooker, cook on low for 3 1/2-4 hours (for 1 pound of chicken breasts, 2 pounds should be cooked for 4-5 hours)

    Sooooo I’m not a fan of green beans, my husband isn’t a fan of corn…. would peas and carrots work with the flavor combo?? Though maybe I should try it, might get me to actually eat green beans! 😛
