10 Freezer Skillet Meals (in 2 hours for $70!)

 

10 skillet freezer meals

 

We all have days where we just don’t feel like cooking a full meal, we are sick, just had a baby, need something for a friend or family member, and so on. Days when we need a quick, easy, and healthy meal to put on the table-without all the work. Freezer cooking can save the day, in less than 2 hours you can put up 10 or more meals that are ready to thaw and cook with very little effort.

You can even DOUBLE up and put together 20 meals in less than 4 hours! Just double each of these recipes.

I used to love the convenience of Hamburger Helper or frozen skillet meals, but not the sodium and other additives that make it not so healthy– so I came up with 10 easy Skillet Meals that you can prep in advance and toss in the freezer. Pull your chosen meal out in the morning to thaw in fridge or you can partially thaw it in a large pot of tepid water, it only needs to be thawed enough to fit in your pan. Meat, veggies, seasonings, everything is already in the bag (minus the unpronounceable ingredients) and ready to go! If I want to put a pasta, canned veggie or other non perishable item with it I just put it in a basket marked freezer meals in the pantry to insure all the needed items are on hand. So prepping these items took me less than 2 hours and around $70 (I Shopped at Ralphs/Kroger AND did this a second time and shopped at Walmart) I feel you can spend less than $70 at most stores–unless you are shopping at a high end health food store. If you have some of the items on hand, condiments, or shop the sales then yours will be even cheaper.

Turkey and Sweet Potato Saute
Unstuffed Cabbage Rolls
Chili Pie With a Cornbread Crust
Feta & Spinach Stuffed Chicken Breast
Taco Pasta
Chicken & Steak Fajitas
Bourbon Chicken
Shrimp & Veggie Stir Fry
Kielbasa & Veggies

Please note: You can pick and choose what you would like to have added to your meals. You might not want Ground Beef, you can sub Bison (more expensive) or Ground Turkey if you would like. Also note that I have not included spices in this as I will assume that you have those common ingredients.

and the list of items that you need to take on this meal plan:

3 lbs. Ground beef
1 16 oz. package Kielbasa
2 lbs. Chicken Breast
1 lb. Ground Turkey
1 16 oz. package Shrimp
32 oz Skirt Steak or similar
8 oz. crumbled Feta cheese
8 oz. Shredded Mozzarella & Provolone or Swiss
1 pack elbow noodles
1 package cornbread
2 cans Rotel, mild with chiles
1 can sweet corn
1 can black beans
1 10 oz. can crushed tomatoes
1 10 oz can kidney beans
3 10 oz. cans diced tomatoes
1 10 oz. can tomato sauce
beef broth
2 pack taco seasoning
soy sauce
small head of cabbage
1 lb. carrots
1 zucchini
1 large sweet potato
2 large russet potatoes
4 cups fresh (or thawed frozen spinach)
3-4 green peppers
2 onions
4-6 garlic cloves
gallon freezer zip bags
mini bottle bourbon

    I noticed the paid for shopping list is missing Stir fry veggies, Tomato Puree, Chicken broth (I see beef broth on the list but no where in the recipes) and food items you suggest to serve with the meals like rice, Asian noddles, sour cream, etc. As well as the spices and things like lime juice and Worcestershire. Would be nice to have everything listed on the grocery list, in case I am out of the basics.

      I was also kind of frustrated by the grocery list. I live in the middle of nowhere so a trip to the store for forgotten/items I didn’t know I needed is time consuming to say the least. I bought an orange and beef broth and they’re not in any of the recipes. Maybe, after 2 years, it’s time to revamp the shopping list.
