10 Freezer Meals made with Zaycon Ground Beef

I won’t deny this– I have just recently discovered the power of the freezer meal. When George got a new job– his hours also changed. He thankfully is coming home at dinner time now and is home with us on the weekends. (Yay!) Usually meals are completely up to me when he’s working because when he was working as a Chef he ended up coming home around 10 and 11pm. So now I have to cook for one more person and we have more “family” meals but I also noticed that I spent pretty much all my time cooking then cleaning up the mess. I decided to cook up freezer meals to make this task just a “little” bit easier on us –so I decided to jump into making enough freezer meals with my 40 lbs of Zaycon Ground Beef that I just picked up.


If you don’t know..  I discovered Zaycon about 2 years ago and instantly fell in love. They are always great quality and the price is always right! I always order our chicken breasts from Zaycon and decided to try something new this last time around– their 93/7 ground beef is AMAZING to say the least and the fact that I get to purchase 40 lbs at one time (and make plenty of meals with it) makes it even better. No need to think about wondering if the ground beef I am buying in the grocery store will be “good” enough and I will have stocked up enough to have variety in our meals for the next few months.

Zaycon Fresh is different from the grocery store because they provide a high quality product and can offer super low prices because they cut out the middle man. The fact that there are many families who buy Zaycon products makes for a lot of negotiating and can  get us the lowest price.

I think my favorite part of the whole ordeal is that it is literally right down the street from my house and the lovely driver puts in right into the back of my car!


I know all that beef might look intimidating but it was actually a piece of cake to pack it into ziplock bags and freeze it. Just make sure you have plenty of freezer space! 🙂

I’ve included 5 of my favorite Freezer Meals below (doubled) with recipes and ingredients. You will have enough to make 2 of each meal! Be sure to make it easy on yourself and pick up your 40 lbs of Zaycon Ground Beef before you attempt these meals. Its a time and money saver!

Freezer Burritos

I LOVE Freezer Burritos for when we want a “fast” food option. My kids even eat them for a after-school snack! Not to mention– they are easy peasy.


  • 2 lbs Zaycon Ground Beef
  • 1 Onion Chopped
  • 2 cans Black Beans
  • 1 Can refried beans (large can)
  • 1 lb shredded cheese (any type will do–we use white cheddar)
  • 24 Flour Tortillas
  • 2 packages taco seasoning


  1. Cook ground beef thoroughly, strain (there was literally NO fat with my 93/7 Zaycon beef, I skipped straining!)
  2. add taco seasoning and follow instructions on package
  3. Chop Onion
  4. Add Onion and Black beans to ground beef and cook for 5 minutes or until onions are soft
  5. Layer Re-fried beans on Tortillas (uncooked), add ground beef mixture and cheese.
  6. Fold Burrito and wrap each one in foil
  7. Prepare for freezer by wrapping each burrito tightly and placing in freezer bag
  8. Freeze
  9. cooking instructions:
  10. Cook in the oven for 30 minutes on 400.

 Tater Tot Casserole:

My kids LOVE this. We add Sweet Potato tater tots for extra flavor! Remember, the instructions below are for TWO meals.


  •  4 bags frozen Tater Tots (we like Alexia)
  •  2.5 lbs Zaycon Ground Beef
  • 2 Bell Peppers (chopped)
  • 1 onion (chopped)
  • 2 cans cream of chicken
  • 4 cans cream of cheddar
  • Salt & Pepper to taste
  • 1 lb shredded cheese (we used Asiago)


  • 1. Cook Ground Beef throughly, strain if needed
  • 2. cut bell pepper and onion
  • 3. Add Salt and Pepper to ground beef mixture
  • 4. Add Onion and Bell Pepper to beef, cook until bell peppers are soft. Turn off stove
  • 5. add Cream of chicken and Cream of cheddar and mix completely.
  • 6. Put beef mixture into a foil pan and make one layer of ground beef mixture
  • 7. Lay 2 bags of tater tots in each foil pan (still frozen)
  • 8. Top with shredded cheese and freeze!

Reheat instructions:

Cook at 450 for 30 minutes or until cheese is bubbling

Mozzarella Meatballs


  • 2 lbs Zaycon Ground Beef
  • 1 onion chopped
  • 2 Cups Bread Crumbs
  • 4 Eggs
  • Italian Seasoning (to taste)
  • Salt
  • 2 teaspoons Garlic Powder
  • 2 teaspoons Onion powder
  • 1 lb Mozzarella (shredded)
  • Pepper
  • 2 lbs pasta


  1. Mix Eggs, Ground Beef, bread crumbs, onions and seasonings in large mixing bowl and mix until well blended with hands
  2. Get about 3 tablespoons of ground beef mixture in hands and flatten like a hamburger in hands.
  3. Place about 1 tablespoon of shredded cheese onto top of flattened hamburger and form a ball
  4. Place on baking pan with foil  underneath
  5. Cook for 20 minutes at 400 degrees
  6. Let cool and place in ziplock bag for freezing

Reheat Instructions:

Cook for 20 minutes at 400 degrees and serve with favorite pasta and sauce

One Pot Taco Casserole
This one is another favorite with my kiddos–and I love it because I can cook everything in ONE pot and be done with it! 🙂 We also like to serve this with broken tortilla chips.


  • 4 Cups Cooked White rice
  • 2 lbs Zaycon Ground Beef
  • 1/2 cup chopped green or red bell pepper
  • 2 cans black beans, drained and rinsed
  • 2 cans tomato sauce
  • 2 Cups Frozen corn
  • 2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 4 tablespoons fresh chopped cilantro
  • 2 cups cheese, shredded (we used white cheddar)


  1. Brown Ground Beef and onion until ground beef is cooked completely.
  2.  Add Bell Peppers and cook until soft
  3.  Add rice and the remaining ingredients into the pot–let mixture cool
  4.  place in Freezer bag and freeze!

Reheat instructions:

  1. Let thaw in fridge, cook for 25 minutes on 350 degrees (in baking pan)
  2. Add cheese on top and enjoy!

 Freezer Lasagna


  • 2 lbs Zaycon ground beef
  • 1 yellow onion chopped
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 2 jars of spaghetti sauce
  • 1 cup grated Parmesan cheese
  • (2)1 lb tub cottage cheese
  • 4 tablespoons parsley
  • 24 lasagna noodles (cooked)
  • 3 cups shredded mozzarella cheese


  1. Brown ground beef  with onions, garlic powder and salt. Drain and add spaghetti sauce
  2.  Let Simmer for 10 minutes
  3. combine Cottage Cheese, Parmesan cheese and parsley in a separate bowl. Mix.
  4. Layer Lasagna beginning with Meat on the bottom of foil pan, then layer with lasagna noodles, then cheese mixture. Repeat three times
  5. Top with Mozzarella cheese
  6. Cover top with foil and freeze

Reheat instructions:

60 minutes at 350 degrees

notes: remember, these meals are doubled– so you should have 10 meals if you decide to make each one of these. These meals feed our family of 5 with leftovers! 🙂 What are your favorite Beef freezer meals?
